Diet Cookie Recipe

Ingredients

  • 1 cup applesauce
  • 1/2 cup quick cooking oatmeal
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup raisins
  • 1/4 cup oil
  • 2 teaspoon vanilla
  • 1 teaspoon nutmeg
  • 2 eggs

Directions

  1. Preheat oven to 375 degrees.
  2. Combine flour, oats, baking soda and powder, salt in mixing bowl.
  3. Add applesauce, eggs and oil and blend well.
  4. Add cinnamon, vanilla and nutmeg to mixture.
  5. Fold in raisins thoroughly.
  6. Use rounded tablespoon to heap batter onto greased cookie sheet.  Ensure cookies are 1” apart.
  7. Bake for 10 to 12 minutes.
  8. Remove from oven and allow cooling before moving to wired rack.
