Mother’s Day Cookies

Serving Mother’s Day cookie recipes are simple but fun ways to celebrate this special day. Here are tasty treats you can whip up for mom and the rest of the family.

Pecan Cookies


1 cup of butter
12 oz bag chocolate chips
1 tsp salt
1 1/2 cups of chopped pecans
2 3/4 cups of flour
1 tsp baking soda
3/4 cup of granulated sugar
3/4 cup of packed brown sugar
1 tsp vanilla


Cream the white and brown sugars with the butter. Add eggs one at a time and beat well per addition. Toss in the vanilla. Slowly add the salt, baking soda and flour.

Add the pecans and choco chips. Mix the ingredients. Get a cookie sheet and cover it with wax paper. Put the cookies there and bake for 18 minutes at 325 degrees F.

Vanilla Flavored Cookies


1 egg
1 cup of sugar
½ cup of cornstarch
3 ½ cups all purpose flour
1 tsp of vanilla extract
2 cups of butter (at room temp)


Begin this Mother’s Day cookie recipe by preheating the oven at 350 F. Get an electric mixer and cream the sugar and butter until they turn light and fluffy.

Add the vanilla and eggs. Add the cornstarch and flour. Keep mixing until the ingredients are well blended. Mold these into cookie shapes (size is up to you).

Put them onto greased cookie sheets. Bake this for ten minutes or until they turn a light brown. After baking, let it cool on the rack. When it cools, you may serve it.

Lemon Cookies


For the crust you will need:

1 cup of flour
½ cup of butter
¼ cup of powdered sugar

For the filling:

1 tsp of lemon rind (grated)
2 tbsp of flour
¼ tsp of baking powder
2 tbsp of lemon juice
2 eggs

For the topping:

Powdered sugar


Make the crust by mixing the powdered sugar and butter. Add the salt and flour. Mix them well. Put this in an 8 x 8” pan. Bake for 20 minutes at 350 degrees F.

To make the filling, mix the eggs, lemon rind, flour, lemon juice, sugar and baking powder. Spread this over the crust. Bake for 25 minutes. Let this cool on the pan after baking. Spread the sugar on top of it. Slice this into square pieces and serve.

Almond Cookies


2 well beaten egg whites
1 cup of chocolate chip cookies
2/3 cup of sugar
1 cup of almonds


Preheat the oven to 350 degrees F. Combine the sugar, almonds, salt, choco chips and egg whites. Mix them and put on greased cookie sheet. Turn the oven off and put the cookies there for 2 and half hours or even overnight. Open the door when it is time to serve the cookies.
